Rye Pie Dough

Ingredients

1 1/2 cup AP flour

1/2 cup Rye flour

1/2 tsp. Salt

1/2 tsp. Stormcloak seasoning

6 T. Cold, unsalted butter

1/3 cup ice water


Stormcloak Seasoning:

2 teaspoons dried dill

1/2 teaspoons grains of paradise

1 teaspoon mustard powder

2 teaspoons fennel seeds

Description

A hearty dough that is good for using in "moist" applications, like toppers for personal pot pies or as the crust for a quiche.

Directions

Put all the ingredients into the food processor except the butter and pulse a few times. Add a few tablespoons of butter, pulse, add a few more, pulse, etc. until the dough comes together. Shape into a ball. Wrap in plastic wrap and refrigerate at least 30 minutes.

Stormcloak Seasoning:
Crush or grind all the ingredients together using a mortar and pestle or a clean spice grinder. Store in an airtight jar.
